This is a quick and easy mud cake recipe – very decadent and simple to make!
Ingredients:
- 2 eggs
- 1/2 cup oil
- 1/2 cup flour
- 1 tsp baking powder
- 1/4 cup cocoa powder
- 1/2 cup sugar
- 2 tablespoons lemon juice (optional, but you can add less if you don’t want it to be completely lemony)
- Mix the flour, sugar, baking powder and cocoa powder until it is well incorporated
- Add the oil. Crack the eggs separately and beat them well; add to the batter. Add the lemon juice if desired. (If the juice is – how can I explain – like, more tangy, then add less). Beat until smooth and well blended.
- Pour in a 23 cm/8 inch round cake tin. Bake at 180 degrees Celsius for 10-13 minutes. Let cool for a while.
- Eat!
TIP: Springform cake tins work best, because then you don’t have to scrape everything out! However, you can also use parchment/baking paper for ease and some cake tins tip the cake out nicely if you turn them upside down.
