‘Our’ Chocolate Cake

This is a recipe which we got many, many years ago from…..a game. Yes, a game. But we have made it countless times, and it never disappoints.

Quick and easy to make, simple, and above all delicious, this recipe is my go-to whenever chocolate craving hits!

This can be made into muffins, cupcakes or cakes. Maximum thickness of the batter in a pan should be 3 cm. There are no restrictions on the shape of the pan/dish.

Ingredients

  • 1 and 3/4 cup white flour
  • 1 cup white sugar
  • 1/2 cup cocoa powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 cup oil
  • 2 large eggs
  • 1 cup milk (temperature does not make a difference)

Directions

  • Preheat the oven to 180° Celsius/350° Fahrenheit.
  • Grease the cake pan or put the muffin cases inside the tray. (See intro for more about dish sizes).
  • In a large bowl, mix together the flour, sugar, cocoa powder, baking soda and baking powder. Make sure all the ingredients are well blended.
  • Add the oil and milk. Crack the eggs in a separate bowl and beat well. Add to the cake batter. Mix together until fully blended. (Electric mixer can be used when wet ingredients are added).
  • Place the batter in the prepared pans. Bake cakes 30 minutes and muffins 15 minutes. Test the cake by inserting a toothpick into the center. If it comes out clean, the cake is done. If there is batter on it, increase time by 5 minutes. Test and repeat if needed.
  • The cake can be covered with any type of icing, frosting, whipped cream, sprinkles etc. Cool completely before decorating.

An idea: Run out of muffin liners? Wash the muffin tray well, grease the moulds with oil and put the batter in them almost till the rim. Bake for 15 minutes.
